Sabrina's Lentil Soup
Ingredients:
Red Lentil 1 cup
Olive oil 4 tbsp
Salt to taste
Garlic powder 1.5 tbsp
Cumin 1 tsp
Turmeric spice 1/2 tsp
Lemon squeezed 1 tbsp
Carrots half cut in slices
Garlic 5 cloves chopped
Onion 1 medium sized
Cilantro 1 bunch finely chopped
Optional Indian 5 spice mixture
Description:
Wash lentils and add 4 cups of water in a soup pot. Add salt, quarter of sliced onion, carrots, garlic powder, turmeric and bring it to a boil. When water is reduced to 1 cup, stir and add another 2 cups of water. Repeat this cycle twice. Then check the water to desired level for your soup. If its less water then add a cup and let it boil but it should not be a thin soup. Once it reaches the thick consistency you want, put the heat in low temp.
In a skillet, add oil, remaining onion, garlic cloves, cumin, cilantro, optional Indian spice mixture. Add salt to your taste if the soup is not salty enough. Fry them until onion is golden brown. Then pour the hot oil and spice mixture onto the lentil soup pot. Stir the soup. Optionally you can add some butter.
Add fresh squeezed lemon for flavor. Serve hot and enjoy.
